Almond Tea Cakes, GF

 
Elevenses is a term used to indicate an 11:00 a.m. snack to include scones, tea cakes, biscuits or the like and tea.  These almond tea cakes are not quite a tea cake, not quite a scone, but definitely elevenses worthy!
 
 
Ingredients: 
sliced almonds
1 cup butter, room temperature
1 egg and one egg yolk, room temperature
1 cup agave sweetener
2 cups gluten free GF flour *
3/4 cup almond flour
1/2 teaspoon baking soda
1/4 - 1/2 teaspoon kosher salt to taste
1/2 - 1 teaspoon almond extract to taste
 
*if using a gluten free flour mix it may already have baking soda in it, then don't add the extra baking soda.

How to:
Oven to 325
toast almond slices - using pan on stove or place in oven on sheet pan for a few minutes
Parchment paper baking sheet or spray pan
 
Cream butter and agave. Mix flours and baking soda in a bowl.  Add egg and egg yolk to butter mixture.  Add flavoring and salt to butter mixture.  Add in the flours and baking soda.  Mix only until combined.  Wet dough.   Using large ice cream scoop, scoop batter onto pan, leaving space for the cake to spread.  Sprinkle top with almonds - use plenty!
 
Bake 20 minutes or until lightly brown and slightly firm.

Because these use gluten free flour and almond flour, there is protein in the cake too!
